Crock Pot Wednesday

Wednesdays end up being particularly busy for us. Calvin has playgroup in the morning, Henry has Science in the afternoon and I have YW in the evening. So I started Crockpot Wednesday. We used to always have it on Tuesdays when those were our busiest, but times change.
Here was last night's recipe. Henry ate 3 bowls!

Classic Chili

1 lb lean ground beef (less than 10% fat)
2 garlic cloves finely chopped
2 Tablespoons chili powder
1 teaspoon cumin
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can red kidney beans, rinsed and drained
1 sweet onion, chopped
1/4 cup canned diced green chiles
2 Tablespoons tomato paste

Brown the ground beef and garlic. Drain off any fat and add chili powder and cumin to coat the beef.
Mix tomatoes, beans, chiles, onions, and tomato paste in a crock pot. Stir in the beef mixture. Cover and cook on high 4-5 hours.

2 points per serving, makes 8 servings.


I also made yummy cornbread. If I had been really on top of it I would have had a salad with it, but somedays just don't work out that way.

Since it's after school and I'm going to Duarte 2nd's Enrichment tonight, I can't in good conscience snack.

So the chilli really sounded yummy!!

yes!!! I love new crock pot recipes. I love using the crock pot... such an easy way to have dinner ready when you don't have a lot of time. I'll have to try this one.

I dont understand why i don't crockpot more. It would be the perfect solution for me...Though now that I think about it, maybe it's because I'm usually at school for the evening, going directly from work so my crockpot meal would be left too long...Im guessing that's why.

I've got the recipe saved though for nights when I will be home to eat it.

I think you should make this a weekly installment - it's hard to find good crock pot recipes.

it sounds tasty - but how is it 2 points per serving?

maybe all the fiber in the beans?

I did a crock pot on monday. nate wanted ribs for his bday dinner. I was busy most of the day so I put in the ribs and poured a bottle of BBQ sauce on it and cooked it all day. The meat just fell off the bones and everyone loved it. It doesn't get much easier than a crockpot.

Well, BBrae the only thing taht could have fat is the meat, so the beans make up for it with all the fiber. I got it out of the Cook It Quick cookbook. The one that has the tortellini soup in it.
I might be persuaded to do a Wednseday Crockpot segment here on my blog. I could probably go 10 weeks without repeating a recipe.

I'm all for the crockpot wednesday tradition . . . on your blog. I should write about my crockpot refried beans that are so delish and astoundingly easy. YUM!
