Have I told you about dinner exchange? It has changed my life. Every Wednesday at 6 o'clock, my neighbor knocks on my door and delivers a hot meal. Every Thursday at 6 o'clock I knock on her door and deliver a meal, all ready to go. Wednesdays are my hectic day with YW and various childrens activities and Thursday are crazy for Shay because she has to work later than usual. It is a piece of heaven on earth. Kind of the way I picture celestial living. You should try it.
This week's salad recipe. More avocados, sorry!
Grilled Chicken Club Salad with Guacamole Dressing
8 slices of bacon
2 pounds of chicken breasts
1/3 cup of olive oil
grill seasoning, like McCormick Montreal Steak seasoning
2 hearts of Romaine, shopped
4 plum tomatoes, chopped ( I used my Vidalia Chop Wizard:)
1 ripe avocado
1/4 small onion
1 small garlic clove, mashed
juice of 2 lemons
1 tablespoon cilantro (a palmful)
Salt
Preheat grill or grill pan to medium high.
Cook the bacon and drain
Coat the chicken with olive oil and grill seasoning (you could also just use a marinade). Grill the chicken on both sides until done.
Combine lettuce and tomatoes in a large bowl.
Cut and pit the avocado and then spoon the flesh into a food processor. Add onion, garlic, lemon juice, and cilantro. Turn the processor on and add the oil in a small stream. Process until smooth and add salt to taste.
Chop the chicken into pieces and add to salad. Pour the dressing on top and then top with crumbled bacon.

Why didn't we do this in Davis? This has been an idea of mine for a long time, I just can't convince anyone to participate. Someday I will have that friend that lives close and wants to trade dinner....
