Falls Favs #3

Big surprise-I am back to food again! I just really love to eat yummy treats, I guess. Today's fall fav is especially special because theses deliciosos can be enjoyed year round! When I was a kid I didn't realize that most people associated eating pumpkin with the fall because this recipe is my mother's every day, every season recipe. I have very few memories of eating any other homemade cookie.

Enjoy.

Pumpkin Chocolate Chip Cookies from Granny Babs

1 cup sugar
1 cup shortening
1 cup canned pumpkin
1 egg
2 cups flour
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon nutmeg
½ teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
1 cup chocolate chips

Mix all together, drop by teaspoonful on a cookie sheet. Bake at 350 (or 375 depending in your oven) for 10-12 minutes

This makes about 3-4 dozen cookies.

Have you ever tried to make them with butter? They sound delicious, but I'm really trying to cut out the trans fat.

I've made them with butter...it's been awhile but I think they taste better with shortening; I don't remember differences in texture, etc.

Come Equinox, every year, I drop to my knees in grateful prayer, thanking the good Lord (not the bad one) for the beautiful, beautiful things that are PCCCs.
