Whatcha got cookin'?

Does your family eat quinoa? I had eaten it at my very favorite restaurant, Andina, but had not ever prepared it myself. Now our family is converted!

Now for some quinoa trivia... it is commonly thought of as a grain, but is actually a relative of leafy green vegetables like spinach and swiss chard.

So go ahead and try this yummy-ness. It's good for you!


Quinoa & Bean Stew

Serves 5 | Prep Time 0:10 | Cook Time 0:15

Ingredients

1 Tablespoon Eden Extra Virgin Olive Oil
1 cup onion, diced
1/2 cup carrots, diced
15 ounces Eden Organic Navy Beans, do not drain
15 ounces Eden Organic Kidney Beans, do not drain
2 cups vegetable stock, see Eden's recipe, or store bought
1/2 cup any Eden Organic Quinoa, rinsed and drained
1/2 teaspoon Eden Sea Salt, if desired
2 cups baby spinach leaves

Directions

Heat oil in a medium soup pot and sauté the onion for 3 to 5 minutes. Add all remaining ingredients except the spinach, cover and bring to a boil. Reduce the flame to medium-low and simmer for 12 until the quinoa is done. Mix in the spinach greens and cook 1 minute until they are wilted. Remove and serve.

I'm a huge fan of quinoa. Love it with just about any vegtable. Thanks for sharing the recipe. Looks like I have all the ingredients to make it.

Thanks for the recipe! I enjoy Quinoa, but the rest of my family aren't such fans. So I try and can cook it "hidden." It is so good for you!

I will try it. I made chicken quinoa stew last night and just enjoyed the leftovers for lunch. It is one of my faves! I will have to email you that one! We love quinoa with brown sugar, cinnamon and milk for breakfast! Yum!

Quinoa is native to Bolivia and we ate it a lot there. They eat it in everything. This sounds great. I will have to try it.
