But don't say a word to that silly old bird about, SHHH, you know, Thanksgiving Day!

Phoebe's Bacon and Pear Stuffing

12 oz package of bacon, diced
1 large red onion
3 celery stalk, diced
1 tsp rubbed sage
3 ripe Bosc pears, peeled, cored, and diced
1 pkg. (14-16 oz) seasoned stuffing cubes
32 oz reduced sodium chicken broth
2 Tbs. Butter

In a skillet cook bacon until crisp. Transfer to paper towels, save 1 Tbs. drippings. Return drippings to skillet and cook onions, 5 minutes. Add celery and sage, cook until soft. Stir in pears, cook 4 more minutes. Place stuffing cubes and bacon in large bowl; toss with pear and vegetable mixture. Pour broth over stuffing and mix well.
Spray a 9x13 pan with Pam and fill with stuffing. Dot with butter. Cover and refrigerate up to 3 days. When ready to bake remove from fridge and bring to room tempereature. Cover with foil and place along side turkey for 45 minutes. Uncover and bake 30 minutes more.

Yum! I just got a ton of bosc pears from my Forever Healthy Organics delivery. Maybe I'll do some pre-Thanksgiving stuffing (since I'm not cooking the dinner this year).
