I have been out of town and busy getting back into the swing of things before I leave AGAIN to go to California next week for Spring Break.
I do however, have dinner in the crockpot. This one is courtesy of Rachel (aka Darlybird).
Shredded Chicken Burritos
4 Boneless, skinless chicken breasts. (I use the Costco kind)
1 small can of chopped green chiles
juice from 2 limes
2 teaspoons of cumin
(can I make a plug for the cumin from Trader Joe's? It is so cheap and so good. Not to rub it in your face if you do not live near a Trader Joe's, but if you are ever at one, pick up some cumin)
1 teaspoon salt
You can do this 2 ways.
Either boil the chicken, then shred it and then add all the ingredients and the boiled, shredded chicken into a crockpot on low for a few hours. This is good for the days I forget to start it in the morning.
OR put all of it in the crockpot to begin with and cook on high 4-5 hours or low 7-8 hours and then shred it. You can even put the chicken in still frozen.
After it is cooked and shredded, serve with tortillas, sour cream, black beans, salsa, tomatoes, guacamole, etc.

As I sit here reading this yummy recipe, I am enjoying leftover Beef Stroganoff for lunch! That was a hit with the fam, which is hard to do around here. I can't wait to try this one, too!
