I realize that I have taken quite a hiatus from the crockpot posting, but it's been kind of warm for crockpot comfort food. So now I am switching to Salad or Sandwich Thursday. I will post a few of our favorites and hopefully you will enjoy this lighter fare in the summer months.
A new take on a classic.
BLT'S with Avocado and Spicy Mayo
4 servings
1 large garlic clove, crushed
1/2 teaspoon coarse salt
2 teaspoons chili powder
2 tablespoons of lime juice, plus more for sprinkling
1/2 cup light Mayo
one 12 ounce package of center cut bacon
8 slices of farmhouse bread (we used sourdough, yummy!)
1 or 2 avocados
2 medium tomatoes, thinly sliced
lettuce
8 dill pickles (if you like)
1. Press garlic and mix with salt. Scrape into small bowl and stir in chili powder, 2 tablespoons lime juice and the mayo.
2. In a large skillet, cook the bacon in 2 batches until crisp. Drain the bacon on paper towels.
3. While the bacon cooks, toast the bread. Slice the avocado and spinkle with some lime juice.
4. Spread one side of each piece of toast with the mayo mixture. Arrange the avocados on 4 of the toasts, pressing them firmly against the mayo. Arrange the bacon, lettuce and tomatoes on top. Top with the remaining toast.
Slice sandwiches and serve with the pickles.

If only I liked avocado, tomatoes and mayonnaise...That otherwise sounds delicious!
Oh Kelly you are MISSING OUT with the avocado aversion. Also with the tomatoes and mayo, but I can actually take or leave mayo, and have you ever had a tomato ripe from the garden? It's really nothing like tomatoes from the supermarket. Seriously.
I am definitely going to try this! BLT + avocado (or guac) = heaven for me, also good with turkey thrown in.

I know! I'm strange. It's something about the consistency, and the taste. It's just not my cup of tea. Wish I liked them though. I wish I liked a lot of things; it would make life easier. Although I've never felt bad not liking mayonnaise. That's like not liking chocolate or something...A BLESSING!
